BBQ SEASON

The sun is shining so let's get grilling!



I Love a good BBQ and always try to bring a little something different to the table. In this post I wanted to give some inspiration for variety adding to your BBQ menu.

Mexican Street Corn


I found this recipe on a blog and you will never look at corn on the cob in the same way!


INGREDIENTS

  • Corn on the cob 6-8 pieces (ideally with husks as these act as a handle)

  • 1/2 cup Mexican crema, or sour cream

  • 1/2 cup mayonnaise

  • 1/2 cup minced cilantro

  • 1 clove garlic, minced

  • 1/4 teaspoon ground chipotle pepper, to taste (you can use paprika if you don't want it spicy)

  • 2 teaspoons lime zest, from one lime

  • 2 tablespoon lime juice, from one lime

TOPPING

  • 1/2 cup cotija cheese, crumbled (you could use feta, I actually swapped for parmesan)

  • Ground chipotle pepper/paprika

  • Chopped coriander

  • Lime wedges, to serve

METHOD

  • Mix all the ingredients for the sauce

  • Peel back the husks

  • Grill the corns on the BBQ

  • Smother the corn with the sauce, top with cheese, chipotle pepper, chopped coriander and serve with a lime wedge.
