I Love a good BBQ and always try to bring a little something different to the table. In this post I wanted to give some inspiration for variety adding to your BBQ menu.

Mexican Street Corn
I found this recipe on a blog and you will never look at corn on the cob in the same way!
INGREDIENTS
Corn on the cob 6-8 pieces (ideally with husks as these act as a handle)
1/2 cup Mexican crema, or sour cream
1/2 cup mayonnaise
1/2 cup minced cilantro
1 clove garlic, minced
1/4 teaspoon ground chipotle pepper, to taste (you can use paprika if you don't want it spicy)
2 teaspoons lime zest, from one lime
2 tablespoon lime juice, from one lime
TOPPING
1/2 cup cotija cheese, crumbled (you could use feta, I actually swapped for parmesan)
Ground chipotle pepper/paprika
Chopped coriander
Lime wedges, to serve
METHOD
Mix all the ingredients for the sauce
Peel back the husks
Grill the corns on the BBQ
Smother the corn with the sauce, top with cheese, chipotle pepper, chopped coriander and serve with a lime wedge.
