RISOTTO

Delicious Wild Garlic & Courgette Risotto served with slow roasted Cherry Tomatoes, perfect for a weekend treat or served at a dinner party.

There is nothing more comforting that an oozy bowl of risotto served with a glass of wine!


For the base I used Jamie Oliver's basic risotto recipe and served with Wild Garlic Pesto, fried Courgette and slow roasted Cherry Tomatoes.

Wild Garlic Pesto

  • Wild Garlic foraged from my garden (this grows wild in hedge rows in spring time so keep an eye out as its a delicious and very versatile wild herb).

  • Pine Nuts

  • Parmesan

  • Lemon Juice

  • Olive Oil

  • Garlic

There is great recipe over on BBC food - place in an airtight jar in the fridge for up to 2 weeks.
